SPICY LENTIL SOUP

With the mornings getting a bit chilly and winter nearly here, now is the perfect time to start making some delicious hearty soups. Try this lentil soup, it is versatile so you can add other vegetables as you desire.





1 tsp oil

1 onion finely diced

1 stick celery finely diced

I carrot finely diced

1 tsp grated ginger

1 tsp garlic minced

1 tsp ground cumin

1 tsp ground coriander

1 cup dried red lentils

1 litre vegetable stock

1 can diced tomatoes

1 lemon juiced

handful of coriander leaves chopped

coconut cream (optional)


1. Heat oil in pan, add onion, celery, carrot, ginger, garlic, coriander. Cook for a few minutes until fragrant.

2. Add lentils and stir to coat. Add stock and tomatoes

3. Bring to the boil then simmer for 25 mins or until lentils are cooked.

4. Stir in lemon juice, sprinkle with chopped coriander and serve!

Optional - drizzle some coconut cream over top before serving.
