Vietnamese Chicken and Noodle Salad



We had some stiff competition and this years Christmas party! Members put in such an good effort to come up with the most tasty and healthy dish to share.

This years winner went to Jenny King who showed how to make a light, tasty and filling salad, ideal for the summer months.


Ingredients:

Shredded Roast Chicken

Bean vermicelli noodles soaked in boiling water to soften then drained

Thinly sliced red onion

Thinly sliced chilli

Thinly sliced lemongrass

Shredded kaffir lime leaves

Chopped coriander

Dressing:

1 part Soy sauce

1 part Lemon or lime juice

Teaspoon of Sesame oil

White pepper

Toss all ingredients to combine and enjoy!
