High Protein Winter Warmer Chicken & Lentil Soup


When the weather cools down, there's nothing better than a hearty bowl of soup. The problem? Many soups are packed with vegetables but leave you hungry an hour later because they're low in protein.


This Chicken & Lentil Soup is different. Packed with lean protein, fibre and plenty of vegetables, it's the perfect nourishing meal for busy people wanting to stay fuller for longer.


Serves: 6, Prep time: 15 minutes , Cook time: 40 minutes.


Ingredients

  • 2 tsp olive oil

  • 1 brown onion, diced

  • 3 cloves garlic, crushed

  • 2 carrots, diced

  • 1 zucchini, diced

  • 500g chicken breast, diced

  • 1 cup dried red lentils, rinsed

  • 1 x 400g tin diced tomatoes

  • 1.5 litres reduced-salt chicken stock

  • 2 tsp smoked paprika

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • Salt and cracked pepper to taste

  • 2 large handfuls baby spinach

  • Juice of half a lemon


Method

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion, garlic, carrot and cook for 5 minutes until softened.

  3. Add the chicken and cook until lightly browned.

  4. Stir in the paprika, cumin and oregano.

  5. Add the lentils, tomatoes and chicken stock.

  6. Bring to the boil, then reduce to a gentle simmer for 30 minutes.

  7. Stir through the zucchini and cook for another 5 minutes.

  8. Add the spinach and lemon juice just before serving.

  9. Season with salt and pepper.

Always include a quality source of protein such as:

  • Chicken breast

  • Turkey mince

  • Lean beef

  • Lentils

  • Split peas

  • Cannellini beans

  • Greek yoghurt (stirred through before serving)


A bowl containing 25–35 grams of protein will keep you fuller for longer, help preserve muscle mass and support recovery after exercise.

Serve with a slice of wholegrain sourdough or enjoy on it's own for a warming, balanced meal that's perfect for meal prep and freezes beautifully.
